25 years professionally catering, a private chef working across six separate countries, and extensive experience on the Indian Ocean working on-board elite charter boats - within the Indonesian archipelago - has all lead Andre to his current position as one of Australia’s most sought after ‘Clean Foods’ chef’s.
Whilst specialising in the tradition of Asian foods, his focus is on modernising flavours – creating robust, palatable sensations sourced from sustainable, organic farmers and select providores of the world. Andre chooses produce that is sensitive to the planet and harmonious to the seasons, depending on region.
