Australian born & raised, Sickinger has vast experience of global cuisine having spent time working across 15 countries and extensive experience on the Indian & Pacific Ocean working on board elite charter yachts - within the Indonesian archipelago & Bikini Atolls. His menu reflects flavours from his extensive travels across the world, especially those of the Asia Pacific region. However, it is Andre's steadfast approach to cultivating close relationships with local farmers that sets him apart.
Sickinger enthusiastically sources his produce to be chemical free, non GMO, toxin & pesticide free with vendors who engage in strict sustainable farming practices intended to restore, maintain & enhance ecological harmony. Therefore he is able to select produce based on its sensitivity to the planet, whilst being harmonious with the seasons – making the chef's culinary creations beyond organic, as he applies a biodynamic approach to his menu.
