    CHEF ANDRE SICKINGER

Andre Sickinger has successfully ramped up 30 years of culinary experience as a restauranteur, chef & private chef to international celebrities, elite athletes, brands & broadcast events specializing in clean, sustainable fuel for the mind, body, soul & spirit.

Australian born & raised, Sickinger has vast experience of global cuisine having spent time working across 15 countries and extensive experience on the Indian & Pacific Ocean working on board elite charter yachts - within the Indonesian archipelago & Bikini Atolls. His menu reflects flavours from his extensive travels across the world, especially those of the Asia Pacific region. However, it is Andre's steadfast approach to cultivating close relationships with local farmers that sets him apart.

Sickinger enthusiastically sources his produce to be chemical free, non GMO, toxin & pesticide free with vendors who engage in strict sustainable farming practices intended to restore, maintain & enhance ecological harmony. Therefore he is able to select produce based on its sensitivity to the planet, whilst being harmonious with the seasons – making the chef's culinary creations beyond organic, as he applies a biodynamic approach to his menu.

CLEAN: clean, lean energy & nutrition is a pure sensation, offering maximum palatable satisfaction while minimizing digestive stress & disorders without a chemical outcome

ORGANIC: certified farmed produce grown with honour & sensitivity. Free from harmful toxins & chemicals

BIODYNAMIC: treating soil fertility, plant growth & livestock care as ecologically interrelated tasks, with an emphasis on local production & distribution systems, plus development of new, local breeds & varieties implimented by an astrological sowing & planting calendar
